Humus is a spread originated in the Eastern Mediterranean area made of chickpeas. The spread is rich in iron, vitamin C, folic acid and vitamin B6. Chickpeas, like other legumes, are rich in protein and fibre.
You will need:
350g of chickpeas (cooked or in glass)
2 tablespoons of tahini (sesame paste)
2 tablespoons of lemon juice
2 cloves of garlic
4 tablespoons extra virgin olive oil
1.5 teaspoon of salt
100 ml of water (if using chickpeas in glass, it is possible to use water from the pickle)
Place all ingredients in the mixer and mix until consistency of spread. Serve with pastry as a spread or vegetables (baby carrot, cucumber) as dressing.
